I was going to write this last week, but I never got around to it. This is my ode to Tofu. I had been craving tofu, and had some sauce left over from making adobo over Christmas break, that with some adulteration would be perfect for my purposes.
A side note here: I have never in my life actually bought and cooked tofu. I have eaten it, others have cooked it for me, but given the fact that my mother is allergic to soybeans, it did not figure in my childhood meals. I had theory, but not practice, so this whole thing was one big culinary experiment.
So, last week I bought a pack of firm tofu for £1.15, a good-sized pack at an Asian grocery in (where else?) Chinatown. I came home, and used half of it to concoct the stir-fry I'd been dreaming of, and proceeded to get at least 4 meals out of it. The second half of the pack had to get used pretty quickly, as tofu does not keep all that well. I responded to this necessity by concocting a tofu and veggies soup. Broccoli, carrots, mushrooms, and green onion seasoned with ginger and garlic in a chicken broth base. It was quite tasty. I liked it so much that I will be making it again, this time with silken instead of firm tofu. I got another 6 meals (at least) out of the soup. That means I got at least 10 protein-laden meals for a base investment of £1.15, less than I would have spent on a similar amount of beef/chicken and with less fat. I hereby crown myself queen of healthful poverty cooking. Tofu is my new friend.
